        cannoli filling

        32 ox ricotta cheese
        1/2 cup confectioners sugar
        1 cup candied citron OR orange rind, or lemon rind
        4oz semi-sweet chocolate chopped or use mini chips

        stir together ricotta cheese and confectioner’s sugar
        fold in rind and chocolate
        chill

        I have made it with the lemon rind instead of the citron ( which is hard to find) I have made it also with the orange rind. people liked it both ways

        use the pita chip it is a lot easier than trying to make a cannoli shell. (that is work)

          do not worry if some of the juice from the orange or the lemon gets in the dip , It just adds more flavor and makes it easier to mix

    The number of new disability beneficiaries exceeding the number of jobs created needs a lot more attention. Disability claims always go up in a recession. The reasons are many and since health insurance is linked with employment those with health problems usually worsen without proper medical care during unemployment. During this depression they have skyrocketed and clogged the appellate process beyond being able to function. For this number to be approved in one month is (to me at least) an indicator that orders from the high command were issued to approve everyone that had any kind of claim. This reduces the backlog of a poorly performing administration, gets people out of the unemployment statistics, and makes points with a key voting segment. In no way am I criticizing the individuals who have to file for disability. This is a system that has been ignored, underfunded, and demonized for decades. I just find it too coincidental that it is getting attention a few months before a national election and statistics would suggest an enormous increase in the approval rate. I would like to see the memos ordering it.
