        It’s really good. That’s the basic recipe, but I always ad-lib. Today, I deglazed the pan with Cachasa (Brazilian moonshine made from sugar cane) A buddy makes it from scratch at his grandparents house in Queens.

      I saw it. Different strokes.

      I only eat them smoked, dry, no aluminum foil wrapping, and then a little of this killer vinegar / sugar / red pepper based sauce recipe I was able to steal at the end. Then I dip the ribs as I eat them in the sauce.

      My WIFE would probably love your recipe. She loves them all mushy and soft. I can’t even cook ribs anymore because our tastes are so different.

        Like I said, I’m a New Yorker, so…. Years ago, I toured the entire South to write a paper on the social significance of the front porch. Had a LOT of great barbecue. Until then, I never knew there were so many variations. I seem to prefer Carolina to any other. (Don’t shoot me… 🙂 )

          The sauce I mentioned is a variation of the eastern Carolina vinegar sauces. It is unique in this part of the deep south though.

            Anthony, you asked for it before – I did not overlook your request. It is so good, I have a law partner that wants me to share it with him and license it to a client of his who makes sauces, seasoning packages and such then markets them to retailers. It’s sort of a potential income source but I’ve never followed up on it – and I’m also like, “I’ve got the recipe, why the hell should you get a cut out of it just because its your client?” I don’t know any way to share it without losing the rights to it (that I stole fair and square). Well, I do, but having someone sign an NDA just to get a fucking recipe is ridiculous.

        I cut the rack in thirds to make it easier to handle, season them, stack ’em on a plate, cover with plastic wrap and let sit in the fridge until the next night.
        Then I smoke them an hour and a half or so in a Weber kettle with the lid on, with a pan of water in the bottom to keep them from drying out. The smoke source is just a few briquets in a 8 to 12 ounce tin can with both ends cut out. Smoke can is on one side of the kettle, ribs on the other.
        Then I put them in a covered roasting pan with herbs and garlic and let them slow cook overnight at 170 degrees.
        Next day, I take them out of the oven late in the morning and refrigerate the whole pan.
        Just before dinner, start a bunch of charcoal for a really hot BBQ, put the ribs on a plate, scraping any fat and jelly back into the roasting pan.
        Remove the hardened fat from the jelly and discard it.
        Make BBQ sauce from the jelly by (for one rack) adding 1/3 cup each of cider vinegar and brown sugar, a tablespoon of tomato paste, a splash of soy sauce, and any favorite herbs and spices. I like rosemary, hint of cloves, mace, cinnamon, and anise seeds, ginger, and crushed red pepper, Boil it down to syrup; it will have big bubbles (half inch) all over when it’s ready.
        Char the ribs slightly over the really hot coals, turning after about a minute and a half. Keep turning them about once a minute until they’re sizzling and starting to char on both sides, then brush them with the sauce, turn, brush with sauce, turn, repeating until the sauce is used up.
        Remove from the BBQ, cut into individual ribs, and serve.
        They’re still pink all the way through, not falling off the bone, firm, but very tender and juicy.
        I prefer spare ribs to baby backs, which is convenient, because they cost less. 🙂

          Wow, that’s a lot of work. I’m sure it’s pretty good. I realize I’m on the far end of the spectrum, I just like mine firm and dry with caramelized fat. Nothing more in seasoning than light salt and pepper with the vinegar sauce splashed on for about the last 15 minutes.

            You would enjoy our KC style ribs then. Dry rub only, smoke at 225-250 for about 4 hours. No sauce except on the table. KC style ribs don’t fall off the bone, they should have a bit of chew to it. We like to use hickory and apple eood

I was afraid there’d been so much infiltration and propagandizing in his 8 years that enough Americans had been brainwashed to believe “America is over – and it’s cool”. If HRC had won, the only way out would have been secession.

      We recently had an adult and juvenile over the lake, the parent was teaching his kid how to fish ! We were mesmerized watching that and concluded Eagles must be conservative birds 😀

        When I worked at KSC, there were about 13 nests on the property. Two were right next to the road, so we watched the little ones grow. And watched the parents teaching them how to fly. Fascinating.

      That’s quite a place to visit. Only a few people at a time are allowed in the room at once to limit carbon dioxide in the air even though the documents are sealed. Lots of guards too. So much history, so much love for our forefathers. We got there for opening and the line was already a 45 minute wait to get in.

      We had an actual Qualifying Hot Eating Prelim in my area to qualify for Coney Island. It makes me gag to think about it. I love hot dogs, but I would start vomiting on my third. Isn’t this covered on ESPN, a Sports channel? LOL.

        I’ve been Walking Away since 2008. Kevin was one of the first steps I made, RD and her “PUMAs”, Amy Siskind and her New Agenda? Threw money at all of them, then they broke my heart. Tea Party gave me new hope, but Obama’s weaponized IRS, AND the GOPe, shut them down pretty fast. Oh what a ride this has been. Conservative isn’t a bad thing, it’s much better than the activist wing of the LBGT’s, I learned that from Milo 🙂

        Oh for FFS, that part of liberty harbor has been in lockdown every 4th of July since 9-11. The only reason why I think it’s an insider stunt, is because I took Special Greg to the lower east side for the Macy’s 4th celebration a few years ago. We ended up at an east river dump with his sister and friends (like she couldn’t arrange a a fun roof top party for us, but nevermind…..). This party took place on dumped mattresses, so we were comfortable. Got there about 6 hours before the “show” (always a good idea to arrive early at a dump, it did fill up by showtime, we had front row seats). I knew we’d get hungry, so gave my dh and her friends a $50 to go forage at the local bodegas and bring back food. We dined well that night, on champagne, twinkies and meat sticks. Yummo.
